The Peterek and Machicek families have been in the meat and sausage business for several generations.
I became interested in the sausage making business when I
was about 7 years old working with my dad and grandfathers.
We did the whole processing....butchering, processing, sausage
making, meat curing, lard rendering, etc.
At that time there were no health regulations. In the winter
months, my brothers and I would hook up mules to the wagon and
sell sausage in Gonzales. Now all the animals must be slaughtered
in a USDA plant.
